This new vintage of Sponti is a hyper-focus on the apple varieties that drive this cuvées evolving blend. Three New York native varieties and one neighboring Bay Stater (Baldwin) were co-macerated for an extended period in 2021. The end result is a cider that is highlighted by both bright and dark fruit tones that give great length to Sponti’s classic mineral and oolong textures. Released without disgorgement - beware of sediment.

Sponti is a spontaneous cuvée – a cross-regional representation of New York State terroir, that changes in blend a little each year, focusing on a small collection of orchards in NY’s Finger Lakes, Greater Lake Ontario region and Hudson Valley. Sponti’s blend is always based on our region’s native apple varieties, which are among the foundation of what makes NE US cider some of the best in the world. After a brief sweating the 2021 apples received a maceration averaging roughly 30 hours prior to pressing. Native fermentations kicked off without temperature control and the cider aged in stainless steel for an extended period on the lees with no battonage. Bottled by traditional method without disgorgement; no fining or filtration. Sulfured minutely, only once - at racking and based on pH.
