liminal MV (21/22)

Like many of the best cider apples, Geneva Tremlett’s has a very biennial nature (something seen in apples far more often than grapes) and therefore does not necessarily yield sufficient crop each year – ‘21 was one of those years. The G.R. & Newtown of ’21 had significant breadth and fruit depth, with a lot of phenolic stability – enough to slowly grow during elevage. After nearly a year, to incorporate the lift and mineral precision of Geneva Tremlett’s, the fresh juice was added to the ’21 blend at bottling. Conditioning occurred in bottle with only the fresh Tremlett’s sugars and remaining native yeasts in the cider.

Liminal is a cuvée that serves to highlight some of the best fruit from each harvest, with a focus on harmonious expression of aroma, texture, and length.  After significant sweating, apples for Liminal are typically macerated between 24 and 48 hours prior to pressing. Primary fermentations occur by native yeast in stainless steel and the cider is aged in old, Hungarian oak puncheons, to give it space to stretch its legs and gather breadth. Bottled by traditional method without disgorgement; no fining or filtration. Sulfured only once (if at all) at racking, based on pH.
