Flux 2021

A blend highlighting varieties Baldwin and Dabinett, with an eye on expressing the soft and opulent side of Dabinett’s tannins and less on their astringency. This marriage results in a bold, sapid cider that leans into the citrus-floral realm, with spice and herb accents and an incredibly long finish. It’s just learning to sing right now and is one to watch for the coming years.

Three stages of maceration, from 22 - 44 hours, followed by a slow natural fermentation, and a further 9 months on the lees in small, neutral barrique. Bottled by traditional method without disgorgement; no fining or filtration. Sulfured only once (if at all) at racking, based on pH.
