Ciders reflective of their unique regional terroir. Both ciders in this series are fermented with native yeasts and aged on their own lees prior to bottling under Rural Method – refermented in the bottle without disgorgement. Fine lees remain in the bottle allowing these ciders to evolve and gain complexity with time.

The ciders in this series are each produced with a single apple variety, grown on the gravelly, sandy loam soils at Samascott Orchards in Columbia County, NY. All apples are milled and macerated for 30 hours prior to being pressed straight to neutral oak barrel. There they fermented and aged on their gross lees for 8 months prior to bottling with minimal sulfur.
